Delicious Raffaello Cake

Coconut Dough:

Coconut – 150 g
Sugar – 150 g
Flour – 2 tb spoons
Baking powder – 1 pack.

Walnut Pastry:

Ground Walnuts – 100 g
Baking powder – 1 pack.
Flour – 2 tb spoons
Cocoa – 3 tb spoons
Sugar – 150 g


Milk – 400 ml
Vanilla sugar – 1 pack.
Sugar – 200 g
Vanilla pudding – 2 packs.
Egg yolk – 10 pcs
Butter – 250 g
Mascarpone – 150 g



Take a baking tray (32 x 23 cm in size). Keep the oven preheated to 180 degrees.


Take the egg whites in a bowl and whip them after adding sugar. After a few seconds of whipping, add flour, coconut, which needs to be kept mixed with the baking powder earlier itself. Put this entire mixture on a sheet and let it bake at 180 degrees. DO NOT bake it for more than 15 minutes.


It is time for us to prepare the dough. Mix nuts, cocoa and baking powder together and add egg whites along with sugar. Now bake this entire thing to get the coconut dough prepared.


We then move to the cream. Warm the milk and add vanilla sugar in it. Slowly, add sugar and custard powder as well. Heat it nicely and then add the egg yolks; make sure you keep the mixture stirring so that no lumps are formed. As soon as the entire thing thickens, take it off from heating.


Butter the base nicely and add mascarpone along with the cooled yolk mass. Then gently spread the smooth cream that’s stacked on the coconut batter. Spread the nutty brown batter and add stuffing on top.


Sprinkle chocolate on top of the cake and keep it in the refrigerator. After a few minutes (or an hour, depending on how you prefer the cake to be), take the cake out, cut into slices, serve and ENJOY!
